Soil moisture not only affects the growth of vegetables, but also affects the nitrate nitrogen content of vegetables. The results of the soil moisture tester showed that the nitrate nitrogen content of the whole plant of spinach and pakchoi was the highest when the soil moisture was 150g/kg, which was 913.6μg/g fresh weight and 1945.2μg/g fresh weight, respectively. With the increase of soil moisture, the nitrate nitrogen content of vegetables decreased significantly. When the soil moisture meter was used to measure soil moisture at 200 and 250 g/kg, there was no significant difference in nitrate nitrogen content between the two types of vegetables, but both were significantly lower than nitrate nitrogen content when soil moisture was 150 g/kg.

The nitrate nitrogen content in the organs and parts of the two kinds of vegetables was the same as that of the whole plant with soil moisture, but the degree of change was different in different organs. Compared with the nitrate nitrogen content in the soil moisture of 150g/kg, when the soil moisture tester was 200 and 250g/kg, the nitrate nitrogen content in spinach roots decreased slightly compared with the stem and leaf. Appropriately increasing soil moisture can actually reduce the nitrate nitrogen content of vegetables, but the degree of reduction varies according to the type of vegetables, organs, and parts.

In the leaves of the main edible part of the vegetables, the response of the leaves to soil moisture is more sensitive, followed by the petiole. Water is the solute of nitrate nitrogen absorbed by vegetables, and it is also the medium for the presence and transfer of nitrate nitrogen in the body. Therefore, the soil water supply is different, and the absorption and transfer of nitrate nitrogen should also be different. The soil moisture tester multiplied the nitrate nitrogen content (unit mass content) of two kinds of vegetables in different soil moisture by the corresponding growth amount to obtain the total amount of nitrate nitrogen accumulated by the vegetables.

The analysis of soil moisture tester showed that the effect of nitrate content in vegetables was different. With the increase of soil moisture, the total amount of nitrate nitrogen accumulated in the two vegetables was not decreased but increased significantly. When the soil moisture was 200 and 250 g/kg Spinach increased by 46.6% and 121.5% when the soil moisture was 150g/kg, and 61.9% and 57.4%, respectively. Cabbage increased due to the absorption of nitrate from the soil. The total amount of nitrogen accumulation reflects, to some extent, the absorption of nitrate by the root system.
